Title: Rice Pudding with Dried Fruits
Categories: Dessert Rice
Yield: 4 Servings

1/2cWhite rice -- medium grain
1/3cSugar
1/2tsCornstarch
2 1/4cMilk, 1% lowfat
1/4cCranberries -- dried
1/4cDried apricot halves --
  Diced
2tsVanilla
  Nutmeg -- freshly grated

In a medium-sized heavy saucepan, whisk together rice, sugar, cornstarch and salt. Gradually stir in milk. Bring to a simmer over high heat, stirring constantly. Reduce heat to low and simmer slowly, stirring often, until the rice is tender and the pudding is creamy, about 20 minutes. Remove from heat and stir in cranberries, apricots and vanilla. Cover the pan and let sit for ten minutes, or unitl ready to serve.
